I have been feeling inclined to buy coconut milk every time I start filling up my grocery basket. After a few weeks, I gave in. I got so excited that I opened up the can and poured it into an old yogurt container, just elated.

Only it said "use within two days of opening"  . . . and it's been about a week. Regardless, I did use it for: french toast!!!

I used some of my homemade bread (still wrestling with the recipe) and poured a little into the egg mixture. Then I poured some more of the coconut milk in with some goat milk yogurt with a little agave nectar and drizzled/drenched the bread, and added a slice of papaya. It was different, no cinnamon nor maple, but it was still very very worthwhile. My my my, what a tropical twist on this little pain perdu.
